Agastache foeniculum (Anise Hyssop). This is an upright, clumping perennial with mauve flowers produced at intervals in a whorl-like pattern on a flowering spike. The leaves are oval, irregularly toothed and dark green with a white-ish underside. The flowers themselves are not fragrant, but the leaves are.
If the climate is mild the herb will grow as a perennial. Harvest the leaves on a dry day.
This species has ornamental flowers and can be used in salads, as a flavouring herb for roast meats, in baking and as a herbal tea. Medicinally, it is often used for digestive disorders. This plant is very attractive to bees and butterflies.
